Tropical Fruit Salad with Vanilla Spiced Syrup

INGREDIENTS

¼ C brown sugar
2 star anise
2 cm fresh ginger peeled and sliced into thin sticks
1 tbsp lime juice
1 vanilla pod split down the centre (or use 1.5 teaspoons of vanilla extract)
565 g can Golden Sun Lychees
1 fresh pineapple core removed and cut into chunks
½ rock melon peeled and chopped into chunks
1 mango chopped
1 dragon fruit halved, skin removed and chopped
½ handful fresh mint roughly torn

PREPARATION

1. Place the sugar, star anise, ginger, lime juice and vanilla in a small saucepan with the juice from the lychees, stir over a gentle heat to dissolve the sugar. Remove from the heat and allow to cool. The flavour of the spices will infuse.

2. Place the fruit in a serving bowl.

3. Strain the syrup although you may like to leave the star anise in, pour over the fruit and scatter with mint leaves.
